Yesterday was Grandparent's Day at church. We had our first service, then potluck lunch and then our second service. I laid out three dessert recipes and let the boys pick which one I should make for the potluck meal. Their choices were Caramel Brownies, Blonde (or butterscotch, depending on where you are from) Brownies or Lemon Squares. They picked the Lemon Squares, which was fine with me since I had all the ingredients on hand to make them. I got the last one on the plate! Everyone probably already has this recipe, as it is very common. But just in case you don't, here it is!
Lemon Squares
First Layer:
2 cups flour
1/2 cup powdered sugar
2 sticks butter
Preheat oven to 350 degrees. Sift Flour and sugar in bowl. Melt butter and pour over flour mixture. Mix and press dough into the bottom of a 9x13 pan. Bake for 20 minutes.
Second Layer:
4 eggs, slightly beaten
2 cups sugar
1/3 lemon juice
4 Tbsp. flour
Mix together and pour over baked crust. Sprinkle with some extra powdered sugar. Reutrn to the oven and bake for 20 minutes more.
